Slow-Cooked Comfort: Chicken-and-Rice Stew

“My mom calls this dish ‘Leftover Rice,’ says Elisa Dudley, Cocofloss’s dental marketing manager. “She told me, ‘I make this whenever I don’t have anything else to cook.’” 


Elisa’s mom is being modest, because really, this is slow-cooked comfort in a pot. Think cozy quilts, the scent of home-cooking, and a steaming bowl of chicken stew served with a kind smile.   

Leftover Rice 


INGREDIENTS


1 cup of chicken stock (or more if you’d like more of a soup than a stew)


¾ cup sour cream 


Some garlic powder and cumin (to taste)


A few cups of cooked rice


Chopped spinach (if you are feeling healthyish)


1 can of diced green chiles 


1 can of mild green chile enchilada sauce


Cilantro (optional)


1 to 2 cups shredded cooked chicken (such as rotisserie chicken)


1 cup of mixed shredded cheese



INSTRUCTIONS


Mix all ingredients together in a Crock Pot or other slow cooker. Cook on low for 4 to 6 hours or high for 1 to 2 hours. Enjoy.
